According to the Food and Agriculture Organization of the United Nations “Food security exists when all people, at all times, have physical and economic access to sufficient, safe and nutritious food that meets their dietary needs and food preferences for an active and healthy life.” (World Food Summit, 1996). Globally, close to 12 percent of the global population was severely food insecure in 2020, representing 928 million people (The State of Food Security and Nutrition in the World 2021). In 2021, 10.2 percent of households in the US were food insecure at least sometime during the year, including 3.8 percent (5.1 million households) with very low food security (USDA).
